Weigh-in and what I’m eating for lunch

My weigh-in this week is a bit boring. I lost what I gained last week and, as such, I’m back where I was two weeks ago! It’s interesting that over the last month or so I’ve not seen a huge loss, but I have seen a loss. If you consider I lost a week due to my operation then it’s not bad at all. I’ve also had to buy yet another set of pants as my waistline keeps shrinking. It’s getting expensive!
I also had an email from a reader asking what do I normally eat. During the week I’m relatively strict about what I eat:
Breakfast (6am-ish):
Oats with blueberries, a protein shake and a coffee or two.
Snack (8am-ish):
One or two hard boiled eggs.
Snack (10am-ish):
An apple.
Lunch (12pm-ish):
I normally make my lunches for the week on Sunday evening and that way I’m not tempted to go out for lunch at work. Here’s what I made last night for this week:
This has brocolli, cauliflower, green pepper, red pepper, yellow pepper, red chilli, garlic, brown onion, red onion, carrots, round beans, mung bean sprouts, mushrooms and cashew nuts in it. Oh and a heap of tomatoes and herbs as a base for the sauce. I think I get my 5+ a day. This was quick and easy to make and it sure does taste good!
Snack (about 2ish):
Another apple (or equivalent fruit - at the moment I’m enjoying apples)
Dinner (5pm-ish):
A large bowl of thick homemade soup with bread.
And thats it. I try not to eat after dinner.
Weekends are where I vary things up a bit. I try to maintain a healthy eating habit for the weekend but I will allow the odd piece of cake to pass my lips!
I’m going to do the exhaustion test for the hundred pushup challenge this evening. Wish me luck!

Oooh…that lunch dish looks great! I never would have thought to put cashews in something like that. Very interesting. I will have to try it out.
Good luck with the exhaustion test! The challenge is so hard and yet I love it. I’m in my second go of week 4 and I can honestly say that I am getting a lot stronger.

That lunch looks delicous Andrew…Who said vegetarians aren’t healthy…
I made a penne with green vegetables last night, but it had too much pasta for the amount of vegies, but it was still very nice.
I feel so much better since I am eating so many vegetables and fruit. I have chick peas soaking at the moment ready for my next creation…Not sure what it will be, but that’s half the fun…

Lunch ala Andrew…that looks great. I eat the same breakfast and lunch too. Wish I could say that I don’t eat after dinner, but I feel my nose growing already. I eat a snack every night.

looks like a healthy diet to me
I usually have the same thing for breakfast and lunch most days too…..just seems easier when you know what you are having for the 2 meals. I don’t eat after dinner either. Some nights I feel like I could skip dinner but I feel like I should sit with the family and eat a little bit ….to be a good example with the veggies and all for the kiddos

I’m on a big apple kick, too, and also blueberries for some reason. I keep buying them now, while they are in season here, and freezing them for smoothies and whatnot,

I like losing weight… It’s not always easy but a glass of water will normally suffice if I get peckish. Except on weekends when I tend to indulge in a snack.

Looks pretty good! I generally cut fresh veggies up on Sunday evening for the week, but I might try your trick of cooking them up instead. Do you know approximately how many calories you’re taking in?

It was a struggle at first but I got used to it. The only times I really struggle nowadays are when I’ve eaten something high in sugar and carbs on the weekends. Then I get the munchies in the evening.

Lunch looks amazing. I should do that for my hubby. He’s always hungry and work- says I don’t feed him enough! What a great idea.

I love cooking on Sunday, so that I have food for the week. It’s the only way to ensure I eat all my veggies! That looks yummmy… I might try it.

Andrew, your progress is so impressive! I started running with C25K in March and also have found myself really enjoying it.
Your lunch does look great! I should really start doing Sunday cooking for the week… it would make life much easier (and healthier!)

Andrew that looks delicious! I think the Sunday prep idea is excellent…I actually started doing it recently. It makes it a lot easier for me to eat healthy during the week if I do that.

Your lunch looks interesting, are you vegetarian? If you are, what kind of food do you eat for proteins?
What I try to do for lunch is when I cook dinner I will cook more than I need so I have leftovers.
About the weight progress, it’s sucks when you don’t lose weight, this last week for me I lost .6 pounds, but that’s life.

Good luck with your pushups exhaustion test — You’re nearing the finish! Only 2 more weeks! Go, Andrew, go! You can do it!!!
Regarding your weight management: Sometimes that happens. The overall trend is downward, so that’s what’s important. But you already know that, of course.
Also, I think you should give yourself a break because you’ve had an operation. (Hope it went well!) It can take a while afterward to adjust to changes in your body after something like that, which can sometimes also affect your weight management. I think you’ve done such a incredibly fantastic job with your exercise & weight loss! I know you’ll get to your goals. I can picture it, & I bet you can too! You are very motivated & determined.
Boy, can I relate to the continual buying of smaller clothes!
It IS rather expensive, isn’t it?! I expect it’ll continue for a bit longer until you reach your goal weight, but it’s all worth it!
